If you are anything like me, getting your family to eat enough vegetables is a challenge. I have found that the easiest way is to incorporate more veggies in our main dishes. The week 12 menu plan features an assortment of recipes that are all packed with vegetables! (Well, okay, the jalapeno for the ribeye might be a stretch, but 4 out of 5 isn't bad.)
