Salsa Verde Chicken Enchiladas

This is hands down the BEST enchilada recipe you will ever have! It is cheesy,  with a hint of spice,  topped with an incredible creamy avocado  salsa verde sauce!

Enchilada  Ingredients

- Onion - Garlic Cloves - Chili Powder & Cumin - Lime Juice - Diced Chilis - Salsa Verde - Sour Cream - Cilantro - Avocado - Monterey Jack Cheese - Shredded Chicken

1. Saute onions & garlic, then stir in remaining filling ingredients

2. Scoop a 1/2 cup of filling into each tortilla and roll.

3. Mash avocado then stir in salsa verde, sour cream, cilantro, & lime

4.Pour sauce over rolled tortillas, then top with cheese and bake at 350°F for 40 minutes.
