Mini Cheesecake Bites

These mini cheesecake bites have a rich cheesecake filling on top of a buttery graham cracker crust. Tons of  flavor in one little bite.



Mix the graham cracker crumbs in a medium bowl with melted butter and sugar, then press a tablespoon into each cup.


Beat the cream cheese in a large mixing bowl until it is fluffy.


Stir in the vanilla and sour cream on low speed, then mix in the eggs one at a time.


Pour cheesecake filling into each cup, filling it almost to the top.


While the cheesecake bites are baking, prepare a strawberry sauce by heating strawberries, sugar, lemon juice, and vanilla. Blend until smooth.
