Instructions
Bring a large pot of hot water to a boil. Add the pasta and cook to al dente according to the package directions. Reserve 1 cup of the starchy pasta water before draining.
12 ounces pasta, 1 teaspoon kosher salt
This sauce comes together quickly, so have all of your ingredients measured and ready to go before you begin.
Melt the butter in a large skillet using medium heat. Add the shallots or red onions and cook for several minutes until they are soft. Then add the minced garlic and stir while cooking for an additional 30 seconds.
1 tablespoon butter, ¼ cup minced shallots or red onions, 2 cloves garlic
Add the cream cheese cubes, lemon juice, and ¾ cup of pasta water to the pan. Cook while stirring consistently until the cream cheese is melted and the sauce begins to bubble.
8 ounces cream cheese, 1 tablespoon lemon juice
Add the pasta and toss it to coat completely. Then, stir in the Parmesan cheese, salt, and pepper. Pour in additional pasta water, if needed, to reach your desired sauce consistency.
8 ounces smoked salmon, ½ cup diced tomatoes, ⅓ cup shredded Parmesan, ¼ teaspoon black pepper
Gently stir in the salmon and tomatoes. Sprinkle chives or green onions over the top when serving.
2 tablespoons chives or green onions
Notes
Storage:
Refrigerate in an airtight container for up to 4 days. If you are using unsmoked or uncured salmon, enjoy it within 2 days.
I love this pasta cold! But if you want to reheat it, put it in a skillet and add a splash of milk or cream to revive the sauce. Cook over low heat until it is warmed through. Do not microwave; that can separate the sauce and dry the salmon.
Make it ahead:
Prepare the sauce and cook the pasta, storing them separately. Then combine and reheat when ready to serve. This is great for busy weeknights!
Variations:
Customize the flavor by adding 3-4 tablespoons of capers, ¼ teaspoon crushed red pepper, a few tablespoons of chopped fresh dill, a splash of white wine, or 1-2 cups of chopped spinach.
The flavors of this creamy pasta pair with other proteins too! Try grilled chicken, shrimp, crab, or lobster!
