Ingredients

1. Mix graham cracker crust ingredients.

2. Press firmly into lined muffin cups.

3. Beat whipping cream to stiff peaks.

4. Cream the sugar and cream cheese until it is fluffy.

5. Gently fold whipping cream into cream cheese mixture.

6. Spread onto crust and refrigerate 3 hours.

Tips

- Use room temperature cream cheese so it blends smoothly into the filling. - Beat the whipping cream until the peaks stay stiff when you remove the beaters. - Top mini cheesecakes with fresh fruit, caramel sauce, fudge, or pie filling.
