Symmetrical - Select straight peppers that can lay flat on the sheet pan. Smooth and Crisp - It should have a good texture. Bright green - The peppers will turn red as they ripen.

1. Wash the Hatch chiles in a large colander and dry them using a paper towel.

2. Lay and spread the peppers on the baking sheet.

3. Broil and cook the peppers in the oven until the skins are blistered.

4. Transfer the roasted chiles to a bowl, cover them, and let them sit to steam.

Storage and Reheating

– When they are vacuum sealed they will stay fresh for over a year in the freezer! – A freezer bag is another easy way to freeze your peppers. – Use a pressure canner and 8-ounce jars.
