This Million Dollar Chicken Casserole skips the canned cream of chicken soup and uses a quick homemade cream sauce instead. Bacon and peas are mixed right in, so it’s a complete dinner with a rich, creamy filling and a buttery Ritz cracker topping.

I’m all for a shortcut when it saves time without giving up flavor. But in this casserole, the sauce does too much of the work to rely on a can of cream of chicken soup. So I make a quick cream sauce instead.
It's the same reason my taco hotdish skips the canned soup. Five extra minutes for a casserole with much better flavor is a trade-off I'm happy to make!
Helpful Ingredient Tips

- Chicken: I cook 2 pounds of boneless skinless chicken breast using my Dutch Oven Shredded Chicken method. I prefer breast meat in this casserole, but you can use rotisserie chicken if you want both dark and white meat.
- Bacon: I cooked 14 slices and had just a little left over after measuring the ½ cup for the filling and 3 tablespoons for the topping. The exact number will depend on how thick your bacon is.
- Cheese: I’m usually a big fan of shredding cheese from a block, but I tested this recipe with pre-shredded cheese and I was surprised to find that it melted just fine. There is already plenty of fat and moisture in the filling to keep it creamy.
Can You Leave Out the Cottage Cheese?
The cottage cheese is a big part of what makes the filling so creamy, so I don’t recommend simply leaving it out. And listen, my husband and kids all hate cottage cheese, and none of them knew it was in here. It blends into the filling without leaving a noticeable cottage cheese flavor or texture.
But if you absolutely cannot imagine putting cottage cheese in your casserole, replace it with an equal amount of ricotta.
Tips to Make the Best Creamy Chicken Casserole

Make the Cream Sauce
- The sauce will be slightly thicker than gravy, and will look a lot like condensed soup once it cools.

Mix the Filling
- If you use a large saucepan for the cream sauce then you can add all of the ingredients right to that pan instead of dirtying a second dish.

Spread into the Pan
- I originally tried this in a 9×9-inch pan, and it filled all the way to the top. Use a 9×13-inch pan so you don’t have to worry about the filling bubbling over.

Prepare the Crumb Topping
- Wait until you are ready to put the casserole in the oven before you mix the butter and crackers. This will help keep the cracker topping from becoming soggy.

Bake in the Oven
- Look for the filling to bubble around the edges and the cracker topping to turn deep golden brown.

Top Tip!
Let the casserole rest for 10 minutes before serving. The filling will look loose when it first comes out of the oven, and that’s normal. The sauce thickens as it cools.
Make Ahead⏳
I chose flour for the cream sauce because it holds up better after freezing. I originally tested it with 2 tablespoons of cornstarch, which worked well for serving right away, but flour makes the casserole more freezer-friendly.
Assemble and refrigerate it for up to three days, or freeze it unbaked for longer storage. Leave off the cheese and crackers until you’re ready to bake, and plan on extra oven time when starting with a cold casserole. Exact timing is in the recipe notes.

How to Serve It
This is a full dinner on its own, so you don’t need to serve it over anything. But there’s plenty of creamy sauce, and I like spooning it over rice, as shown here. Pasta works well too, and either one will help stretch the casserole if you’re feeding a crowd.

- 2 tablespoons (28 grams) butter
- 3 tablespoons (22.5 grams) flour
- 1 ¼ cup (296 ml) milk
- 1 teaspoon bouillon powder or better than bouillon paste
- 1 teaspoon kosher salt
- ¾ teaspoon (0.75 teaspoon) onion powder
- ¾ teaspoon (0.75 teaspoon) garlic powder
- ½ teaspoon (0.5 teaspoon) ground pepper
- 1 cup (210 grams) cottage cheese small curd, full fat
- ⅔ cup (153 grams) sour cream
- 6 oz (170 grams) cream cheese softened
- 5 cups (700 grams) chicken shredded and cooked
- ½ cup (73 grams) frozen peas optional
- ½ cup (57 grams) bacon cooked, crumbled
Topping
- ½ cup (57 grams) low-moisture mozzarella cheese shredded
- ½ cup (57 grams) cheddar cheese shredded
- 1 sleeve Ritz Crackers crushed (about 30 crackers)
- 4 tablespoons (56 grams) butter melted
- 3 tablespoons (21 grams) bacon cooked, crumbled
- green onions sliced for garnish, optional
- parsley chopped for garnish, optional
Instructions
- Preheat the oven to 350°F (177°C) and spray a 9x13 baking dish with cooking spray.
- Melt the butter in a saucepan over medium heat. Add the flour and whisk continuously for 60 seconds.2 tablespoons butter, 3 tablespoons flour
- Slowly pour the milk into the pan, whisking vigorously. Then whisk in the bouillon and spices.1 ¼ cup milk, 1 teaspoon bouillon powder , 1 teaspoon kosher salt, ¾ teaspoon onion powder, ¾ teaspoon garlic powder, ½ teaspoon ground pepper
- Once it comes to a simmer, whisk for an additional 30-60 seconds to let it thicken sufficiently, then remove the pan from the heat.
- In a large mixing bowl (or in the pan if it's big enough), add the cottage cheese, sour cream, cream cheese, and the mixture from the stove. Mix until creamy and well combined. Toss in the chicken, peas (no need to thaw), and bacon, and mix until combined.1 cup cottage cheese, ⅔ cup sour cream, 6 oz cream cheese, 5 cups chicken, ½ cup frozen peas, ½ cup bacon
- Spread this mixture evenly into the baking dish and sprinkle the mozzarella and cheddar cheeses over top.½ cup low-moisture mozzarella cheese, ½ cup cheddar cheese
- In a small bowl, mix the crushed crackers and melted butter. Spread evenly over the top of the cheese and top with the bacon.1 sleeve Ritz Crackers, 4 tablespoons butter, 3 tablespoons bacon
- Bake uncovered for about 35-40 minutes or until the dish is hot all the way through. Remove from the oven and rest for 10 minutes, then top with garnishes and serve.green onions, parsley

- Make ahead: Assemble the casserole up to 3 days in advance, but leave off the cheese and cracker topping. Cover and refrigerate, then add the toppings just before baking. Allow about 10 additional minutes for the cold casserole to heat through.
- Freezing: This casserole freezes best before baking. Assemble the filling, but do not add the cheese or cracker topping. Thaw it in the refrigerator, add the toppings, and bake as directed. It may need an additional 10 to 15 minutes in the oven.
