Texas is a big state with an even bigger cultural background. The Lone Star State was once its own country before entering the union in 1845.
But even before it was its own country, Texas was a part of the Republic of Mexico until 1836. It is no surprise that the cooking techniques and spices from Mexican cuisine influenced Texas cuisine. This union of flavors resulted in my favorite type of food, Tex-Mex, including incredible dishes like sizzling fajitas, cheesy enchiladas, and nachos.
It's also a huge state, spanning over 250,000 square miles. Each region of Texas has its specialties. The Texas Hill Country, including the state Capital, Austin, brings us the very best smoked brisket. It also has German and Czech influences, bringing us kolaches and chicken-fried steak.
The Rio Grande Valley region along the southeastern border of Texas is known for its rich blend of Mexican and Tex-Mex dishes. Iconic Rio Grande cuisine includes puffy tacos filled with spiced beef or chicken, and creamy queso.
Beef is king in West Texas, due to the massive cattle farms. From seasoned, juicy steaks to giant bowls of meaty chili con carne, this region's frontier cuisine spotlights succulent cuts of beef and bold flavors.
